Utilizing fresh frozen cadavers to identify anatomical structures is beneficial because it is as close to practicing on living tissue as you can possibly be, before you get to move on to live patients. The tissue, not only withholds the same elasticity as when the cells are living, but it also remains the same or a very similar color. The muscles, tendons, ligaments, adipose and epithelial tissue, etc, remain intact, in the correct anatomical position, and retain the same texture and size.  Realism is the largest benefit of working hands on with fresh frozen cadavers.
